Hominy Chili

Here's an example of making the same old chili into a new dish.


Hominy Chili
serves 4

extra virgin olive oil
1 small onion
1 pound ground beef
1 teaspoon salt
3 tablespoons chili seasoning blend (recipe follows)
1 cup hominy (from a can, drained)
8 ounces tomato sauce
16 ounces water
15 ounces beans (I used red kidney beans)

In a large skillet over medium heat, saute onion in olive oil until transparent; add ground beef. Cook, stirring often, until browned. Stir in remaining ingredients and bring to a simmer. Cover (use foil if you don't have a lid that fits) and cook 10-15 minutes to allow flavors to marry.

Serve piping hot in bowls.



Chili Seasoning Blend

1 teaspoon salt
1 teaspoon paprika
1-1/2 teaspoons ground cumin
1-1/2 teaspoons dried oregano
1-1/2 teaspoons garlic powder
1 tablespoon chili powder
1/2 teaspoon ground cayenne pepper
pinch cinnamon
