Superbowl Food: Recap

The party Mr.W and I attended Sunday for the Superbowl was a fun one. This time there was a houseful of children--something we're not used to--so it was a bit more "active" than usual! And with all of that activity, I forgot to take pictures! :( Sorry... I'm a bad blogger, I know.

But I did make a new friend. Young Zach, who decided he wanted to sit next to me most of the night instead of playing with all the other children. At about 4, he was a bundle of energy, and brought me toy after toy to play with him. And that was fun.

The party was a good time, even though the game was not the center of activity. We brought some of our favorite dishes to share:

- One-Bowl Sugar-Free Flourless Chocolate Cake, which I frosted with sugar-free whipped cream and decorated with a drizzle of sugar-free chocolate syrup. No photo, sorry folks!


- Mr.W's Famous Fool-the-Vegetarian Dip. It was gag-me salty, but people love it... so much so, the hostess decided to make a batch, too! We have a ton leftover, and I tried to eat some with some chips. I had to cut the saltiness with some salsa... edible, but still not good. I don't know why people eat this. (Read the story of how this dip was named here.)

- Cheater Guacamole: again, no picture of this. It was SO good--I chopped 3 ripe avocados into chunks, combined with the juice of 1/2 lime, then a few spoonfuls of our favorite salsa. I mashed it to a coarse consistency with a potato masher--still chunky, though, and very good. I would have preferred some jalapeno added.

- Mrs.W's Jerk Meatballs: this is a favorite among our friends. When I lived in Key West I fell in love with the jerk chicken wings at PT's Late Night Bar & Grill--one of our favorite spots! I discovered the right sauce to replicate the flavor of those wings, only now I use it for meatballs. Here is the easy procedure:


Mrs.W's Jerk Meatballs
makes about 60 or so party-sized meatballs

- 2 bags frozen meatballs (I get them in a bag at Aldi, about 30 meatballs per bag)
- 1 bottle jerk sauce (my favorite is World Harbors brand Jamacain-style Jerk Sauce--it is a raspberry-based sauce, and the key to achieving the taste from PT's in Key West)
- about 2 tablespoons Blue Mountain Country Caribbean Jerk Seasoning (optional; you could omit entirely or use your favorite bottled jerk spice blend)

Place meatballs in electric skillet; cover with entire bottle of sauce and sprinkle with seasoning, if using. Stir. Set skillet to 400*F and cook, stirring often, until sauce is reduced by half and sticking to the meatballs.

Serve right out of the skillet (set to warm) with toothpicks.

As usual, my meatballs were demolished.

Other foods at the party included chicken wing dip (something cheesy and chickeny and spicy), sausage bread (a Central NY delicacy, this is pizza dough rolled up with cooked sausage and mozzarella for a delicious slice of heaven), veggie platter and lots of cakes, cookies and sweets.
