I agree completely that the pom syrup/molasses can have that funny taste. IMHO it's always better to start with fresh juice and DIY the reduction, not to mention I like doing it sans sugar. According to David Lebovitz, it's alcohol and sugar both that contribute to ice cream's scoopability/consistency.

Pomegranate juice itself is pretty high in natural sugar (which is exactly why I'm not just drinking it straight) and even more so when it's reduced--perhaps that's what's at the bottom of it!Amandahttps://www.blogger.com/profile/06225368051741189734noreply@blogger.comtag:blogger.com,1999:blog-1555929730378028813.post-38927717491951904572009-04-17T04:20:00.000-04:002009-04-17T04:20:00.000-04:00They were going to send me some pomegranate juice ...They were going to send me some pomegranate juice but then they found out they couldn't send it internationally :(

Making ice cream with it is very creative, I would probably have just drank it!

Normally when ice cream stays soft it's either alcohol, salt or a lot of sugar that's causing it. I wonder if the pomegranate juice has something to do with it or maybe the sugar substitute stops it freezing fully.Samhttps://www.blogger.com/profile/04554151962924841103noreply@blogger.comtag:blogger.com,1999:blog-1555929730378028813.post-72062105247217108012009-04-16T21:46:00.000-04:002009-04-16T21:46:00.000-04:00I love the idea of pomegranate ice cream! The only times I have had homemade ice cream that really won't get past the soft serve consistency is when I have made versions with alcohol (Kahlua or Baileys)...has something to do with the alcohol changing the freezing point, I think. Maybe pomegranate juice has the same properties? Doesn't bug me at all since I love soft serve!Kathyhttps://www.blogger.com/profile/02841167006406568113noreply@blogger.com
